Wrestling is not included in the game from the beginning. You need to go through the main story until Kaifeng gets opened. Right now, all the wrestling events are taking place in Kaifeng. You can also contact a wrestling NPC in Kaifeng City and practice at your convenience.

The objective is quite clear. You need to bring down the Fighting Spirit of your opponent to zero within 20 rounds. If you cannot do this, the match is over and you lose. The Fighting Spirit only decreases with certain attacks and thus, there are no chances to win the match by just stalling.
