Mohg is not part of the base game. You must have The Forsaken Hollows DLC installed for him to appear in expeditions.
During the second night of the Dreglord expedition, you may face either Demon Prince or Lord of Blood. If your first-night bosses were Curseblade and Divine Beast Warrior, Mohg is guaranteed for Night Two.

1. Pick Up Instruments That Prevent Blood Loss
A good number of Mohg’s attacks put bloodflame which gradually decreases your health points. Before the beginning of the Second Night, hoard Stanching Boluses, take relics that minimize blood loss accumulation, and bring sufficient healing for lengthy battles.
Bleed can still affect Mohg, so it’s still a good idea to bring a weapon that has Hemorrhage buildup.
